There's nothing cozier than a bowl of Italian Wedding Soup! My family's recipe combines tiny meatballs, acini di pepe pasta, and escarole in a flavorful parmesan-infused chicken broth.

white bread milk onion, carrot, celery egg pecorino romano parsley ground beef and pork chicken broth escarole acini di pepe pasta parmesan rind

How to Make My Family's Italian Wedding Soup

Make the meatball mixture and shape it into 1-1/2 teaspoon portions.

Brown the meatballs in a Dutch oven until golden brown. Remove from the pot.

Sauté the onions, carrots, and celery. Add the broth, meatballs and cheese rind and bring to a boil.

Stir in the pasta and simmer until tender. Add the escarole during the last 5 minutes of cooking.
