Cool off with this Frozen Watermelon Daiquiri! Made with sweet frozen watermelon, fresh citrus, and light rum — just toss everything in a blender and sip. Mocktail option included!
4cupsfrozen seedless watermelon cubes, slightly mounded (see Note 2)
4ounceslight rum(½ cup)
2ouncesfresh lime juice(¼ cup)
2ouncesorange juice(¼cup)
1 to 2tablespoonssimple syrup(to taste - use more or less, depending on the sweetness of your fruit)
Instructions
Add rum, lime juice, orange juice, simple syrup, and frozen watermelon cubes to your blender canister and process until smooth (see Note 1). Start with 1 tablespoon of simple syrup and add additional to taste.
Serve immediately, garnished with a lime wheel or a small wedge of fresh watermelon.
Notes
1. Blender: These frozen daiquiris are best made in a high-speed blender, like a Vitamix. You might need to use your tamper to get things moving at first. If using a standard blender, pulse as needed and occasionally stop to scrape down the sides of the canister to avoid taxing the motor. You might need an extra splash of liquid.2. To freeze the watermelon: Cut away the rinds and cut the fruit into 1- to 1-1/2 inch cubes. If using a standard blender, cut them a little smaller so they're easier on the motor. Spread the watermelon chunks out on a baking sheet and freeze until completely solid, at least 2 hours. 3. To make simple syrup: stir together equal parts water and granulated sugar in a saucepan. (1 cup water to 1 cup sugar). Heat, stirring, until the sugar is dissolved and small bubbles begin to form along the sides of the pan. Remove from heat and let cool to room temperature. Store in an airtight container in the refrigerator for 3-4 weeks. 4. Non-Alcoholic (Mocktail) Variation: Omit rum and increase orange juice to 1/2 cup, adding a bit of water to the blender to thin the mixture, as needed.
