Instant Pot Corned Beef

Let's Make Instant Pot Corned Beef

Combine onion, garlic, pickling spices, and water in the insert of a 6-quart Instant Pot. Place the corned beef, fat side up, on a rack on top of the onions. Pour in the beer.

Seal lid and cook at High pressure for 85 minutes, with a 20 minute natural release. Remove corned beef from the IP and tent with foil. Strain the cooking liquid.

Add 1.5 cups of the liquid to the IP with the potatoes, carrots, and cabbage. Cook at high pressure for 3-4 minutes, and quick release the pressure.

Slice corned beef against the grain. Sprinkle parsley over the vegetables, and if desired, drizzle with melted butter. Serve corned beef with mustard.
